The best part of making these was getting to drizzle chocolate everywhere (including on my fingers…totally accidentally). I was planning to use my new icing set to ice these all beautifully, but I realised that would take forever so melted chocolate it was!
Chocolate/Vanilla Cupcakes:
150g soft unsalted butter
150g caster sugar
175g self raising flour (replace 15g of flour with cocoa if making chocolate flavoured)
3 eggs
1/2 tsp vanilla extract (1 tsp if making vanilla flavoured)
Preheat oven to 350F or 180C and prepare a cupcake tin with cases (makes around 12 cupcakes). Sift the flour, and cocoa if using, into a bowl and add the rest of the ingredients. Use an electric whisk (or pure muscle power like me!) to beat all the ingredients together, until creamy and smooth. Then spoon into the cupcake cases and bake for 10-15 minutes. Decorate however you like!

Well all these cupcakes put mine to shame, but they sold very quickly so they can’t be that bad :)
